My friend, Megan, shared this recipe with us and we can't get enough. The splash of orange juice sets this recipe apart from most Guacamole recipes. The sweet citrus orange juice contrasting with the sour citrus lime juice really enhances the flavor.
Unfortunately avocados have been very expensive lately. Luckily we found some on sale the other day. Tonight we whipped up a batch after the kids went to bed because we didn't want to share! So if you find a good deal on avocados you should try this.
2 ripe avocados
1 tsp. salt
1 Tbsp. garlic, minced
1/4 lime (just the juice)
1/4 orange (just the juice)
1/4 Serrano Pepper (just enough for some flavor but NO seeds unless you like it spicy!)
1/2 Roma tomato - diced
1 slice red onion - diced
1 tsp. cilantro
Halve the avocados and discard the pit. Scoop out the avocado into a mixing bowl making sure to get the flavorful darker green part close to the peel. Add remaining ingredients and mix. Grab a bag of chips, your favorite beverage (Mine is the Mango Breeze Margarita or the Samba Sangria. You can find them on my other site here) and enjoy! Everdays An Adventure
